Doing a Delia

Oh January, January, why do you make yourself so hard to love with your bad weather and your dark mornings, your scary bills and your post Christmas bulges? And no matter what you say, you're DEFINITELY longer than all the other months. For instance, July and August go by in a flash, and there's definitely a fast forward button from Halloween to Christmas, and yet here you are, still barely half way through and dragging your feet like a sulky teenager. Honestly, if it wasn't for my Sky + and electric blanket, I'd be totally lost. 

I've been trying to be good...some of the time at least, as I reel in the Christmas choc and wine fest and returned shamefaced to Zumba class, but its hard going. Contrary human nature being what it is, when we (I) make something verboten - say a caramel square as a random example- the more we (I) crave the heavenly  scrumptious combination of shortbread, caramel and chocolate.

So I got to thinking, every time I go to Pizza Express I get the tote amaze Bruscetta Originale, as a starter mind, not a whole meal- it wouldn't fill a hole in your tooth. But it's delish, easy peasy and quick, and yet I've never actually bothered my bum to make it right here at home.
 Until yesterday ....and I was so pleased with my cleverness that I took pictures, as you do. And here they are... can you smell the garlic? If you fancy a delicious, quick healthy snack/small meal, I urge you to give it a try.

A tad more than a drizzle but never mind!

  Any bread will do- I used French stick and some walnut bread I had- toasted it in the oven, rubbed a garlic clove over it and brushed it with olive oil.
Then I piled on the topping  (a mix of  baby tomatoes, onion, garlic, salt, pepper and olive oil) and drizzled some pesto on the top. Yum scrum! All healthy and washed down beautifully with a chilled glass of wine.
 Just don't do what I did later on and use it to justify that Lindt chocolate  with my cup of tea.....Oh well, onwards and upwards!

  4. This looks very tasty its good to get some new idea as I'm always making the same old things. Great to see you on Friday and as Avril said, the caramel square was yummy!
